My SQL team suggested setting ours up to use Log shipping. Do you think
that is sufficient? This way the data is not replicated real time but
you can set that often. I am thinking that will probably be okay as our
data doesn't really change frequently. I just don't know if with log
shipping if the cutover is transparent, trying to find out. 
 
Also if the database were to go down, that is the impact to the users?
Can they continue to send/receive email?

Yes, I've done it and we're running a mirrored SQL 2005 database (BES
5.0 MR2) in production.
