I agree, the deployment of BESv5 isnt necessarily going to happen at the same time we get Exchange2010 online. We are just starting to upgrade our DCs to 2008 and EOL some others so it's a ways away. We have 2010 working in our lab but we're still working out a few kinks while testing out different migration paths. Since 2010 and 2007 are similar, we've seen in our test migrations that there shouldn't be any crazy surprises.
Our BESv4 server is a VM so we have snapshots to roll back to in case something blows up. That's why for the most part, I've thought of standing up a new server VM for BESv5 for those same purposes.
