Unfortunately, for the near term at least, SqueezeCenter requires that all files be scanned before being able to play them.
What you want is probably covered by this request. Please feel free to add your comments or vote: http://bugs.slimdevices.com/show_bug.cgi?id=2333 On my setup, I keep a folder for new music at the top level of the music folder. When I add new music, I put it there, use Browse Music Folder to get to it and play.
