Further update on this problem. This morning I've attempted an uninstall (both leaving and deleting preferences) and reinstalled a previous version that was working, but no luck, still bombs out starting the service.
Over the weekend I upgraded to WSUS 3.0 and Sharepoint 3.0 on the server, so it looks like there is a conflict caused by one of these. Bum! Looks like the NAS box is going to be a priority now.
