After trying a few other reloads and fiddling with it some more, I went back to 7.4.2, killed the SQL process and restarted the computer. After that the uninstall for squeezebox server finally completed. I wiped out everything and finally installed 7.5.1 anew from scratch.
This is the first time I've seen the staff picks by several of the Logitech guys, and related updates.
