I haven't had any similar problems with any of the 7.6 firmwares. My Touch is running 7.6.0 r9056.
You recently did a factory reset and reinstalled the 7.5.0 r8837 firmware. What changes did you make after the reset? I typically make a dozen or more - changing the name, the wallpaper, screensavers, brightness, the Home menu, enabling SSH and storage sharing, and some others. Maybe there's something in there that is unique and causing this. Perhaps doing another factory reset and running with all default settings (for as long as you can stand it) would give different behavior. If it runs OK, make configuration changes one at a time. Wired or wireless? Are you using the internal server? Are you using mysb.com at all? Is your local SbS server always running? Are you using any particular apps? Where are you finding that the proximity sensor isn't working? It was my understanding that the proximity sensor isn't used at all for any ui functionality.
