Yeah, the debian repo for SBS isn't up to date. You can go to http://downloads.slimdevices.com/nightly/ to download the 7.6.1 deb package. Then install via:
sudo dpkg --install [path and filename to deb file] It's a couple more steps, but it works. One thing I recommend is stopping your current SBS before installing 7.6.1.
