Apparently it's used by the players to identify the server in some manner. Maybe a part of slimproto. Probably unimportant if the servers aren't running at the same time. For some reason it seems to be more critical for SP based players. If you have two instances running with the same UUID the players will bounce back and forth between them, as though they can't tell the difference. You'll see it on the display as "Connecting to..." spinnies. That's how I've always tested, unless I'm testing something that I know to be different within or affected by the firmware itself. I suppose it may be important in some particular tests, but it's unimportant for most. For example, it's necessary to have a player connected just to test adding music to a playlist.
