It might be possible if you set the file system attributes on the
"Unsorted" directory so it becomes a hidden or system directory, but
I'm not 100% sure the scanner will still exclude it. I'm also not sure
you really want it to be hidden as you probably like to continue to be
able to browse it using your favorite file manager.
However, you can setup each individual A..Z directory as a media folder
but don't setup "Unsorted".
