[SPOILER ALERT -- skip this if you haven't seen the show]

I'm also watching Firefly again, so the bar is set pretty high in my
mind. SGU trying to do character development looks like a joke in
comparison.

It isn't?

We need air! Ship opens SG to the planet with the minerals needed to
reload the air exchangers.

We need water! Ship opens SG to the ice planet.

We need food! Ship opens SG to the jungle planet with the fruit (and
the Alien-style critters which were awesome).

We need power! Ship drives through a star. This was the obvious
outcome of the cliff-hanger, but it was still one of the better
episodes.

etc. etc.

Again, I like the show. However, it's very episodic.

Another gripe I have with Life is the chair. As soon as it appeared
on screen my wife said, "Oh, it's the Dollhouse chair." I doubted
that they would blatantly rip off another currently airing show. 30
seconds later Dr. Rush is explaining how whoever sits in the chair
will have the knowledge of the ancients implanted directly into their
brain. Dollhouse certainly did not invent this idea, but come on.

Much like the jump in quality of Buffy S2 over Buffy S1, when they
went to longer story arcs instead of "monster of the week" there's
still hope for SGU. They need to smash those stones into tiny pieces
though.
