Like Brad said, premium sleeves are always thicker and have sharper edges and tighter fits which makes the cards easier to shuffle and less likely to slide out of the sleeve.
I use regular sleeves for games that don't get shuffled all that often (things like Descent class decks) and premium sleeves for games that do.
