If you need to cite individual papers/proceedings in a collection you should create individual items for those. have a look at the inproceedings and incollection types. they are also frequently used in combination with the Crossref field. You can also use citation fields (see the Defaults prefs) to make it easier to relate items in BibDesk, though that has no influence on the bibtex.
