Bibdesk has full content searching, when I type something into the search bar "File Content" comes up along with "Title", "Author" etc. It's a bit slow the first time as it builds the search index, but fast afterwards (is it cached at all after quit?). I've been using the nightly build for a while, perhaps this isn't in the release version yet?
