I think BibDesk's "New Publication from Clipboard" feature is outstanding--the keyboard shortcuts make it much easier than cutting and pasting into individual fields.
But I often find myself with an incomplete publication record for whatever reason that I want to complete....and my only option once the publication has been added is to add the information field-by- field by cutting and pasting. What I propose is an "Edit Publication from clipboard" function that would reside in a publication's context menu and/or the gear thing in the publication edit screen and/or the Publication menu item. It would operate exactly like the existing "New Publication from Clipboard" but existing fields would be populated from the existing publication, and the buttons would be "Cancel" "Clear" and "Update".
