You'll need to provide the exact steps to reproduce the problem (how are you adding a publication?). Next time BibDesk freezes, go to Activity Monitor (not Console as a previous post indicated), select BibDesk in the list of applications, and click the "Sample Process" button in Activity Monitor's toolbar.
