There's also a very handy application named bibtool 
(http://www.gerd-neugebauer.de/software/TeX/BibTool.en.html 
) that can be used for this purpose and much more such as macro  
expansion, sorting and pretty printing of BibTeX files.

The following command extracts all references used in a document:

   bibtool -x document.aux -o document.bib
