Hi Miguel:
In my document preamble I type:

\usepackage[utf8]{inputenc}
\usepackage[T1]{fontenc}

and then use accents everywhere in the text.

The only drawback to this is if you like using latex2rtf, which I haven't 
managed to get to work with utf-8.
So, if you plan to use that, it would be better to use:

\usepackage[latin1]{inputenc}
\usepackage[T1]{fontenc}

By the way, I've found the CervanTeX FAQ quite handy in solving issues with 
accents when working with TeX in 
Spanish  (though you certainly can find as good, if not better, 
resources for French elsewhere).
