You can get a list of all authors in a document by choosing Author as the group 
field (View > Group Field). It does not list the actual names as they're 
entered in the database, and does some fuzzy matching of names. You can see the 
actually used raw names for a given author using Get Info on such an author 
group, or by double-clicking the icon of the group.

The way names are represented in the generated pdf depends on the bibtex style 
you use. It does not depend on the way the names are entered in the raw bibtex 
data, as long as it is consistent with the bibtex conventions. All of this is 
unrelated to BibDesk, which only manages the data, not the bibtex generation.
