Yes, I've done it several times.

You are just changing the axle from a solid one to a hollow one.  However,
the trick is often the solid axle is a very slightly different thread than
the typical hollow axle.  Not sure why this is so but solids seem to follow
an English standard vs metric for hollows.  If this is the case, now you
also need to find the right bearing cones as well.  You also need locknuts
with the serrated flange to grip the inside of the mounting surface.  The
hollow axle has to be the correct length to fit into the drop outs without
extending out.  And of course you'll need a Q/R.

It's a bit of work but if you have accumulated a stash of old bicycles &
parts, you can usually do this from your parts bin.  If you need additional
parts, Loose Screws is a good source for stuff like this.
