Maple syrup can be vegan or not. A very small amount of fat is used at the
end of the boiling process to reduce foaming. The fats can be lard or other
animal derived oils, plant-based oils or commercial defoaming agents made
from animal of vegetable sources.  The quantities are very small, around 1/4
tsp of oil per 8-gallons of syrup. It's probably a safe bet that there is
more animal protein in the pancake flour than in the syrup, due to the
presence of hapless insects that stumbled into the grain at some point in
the processing.  Ok, that's more details than I care to think about right
now.

However, some people may feel that collecting maple sap is cruel to trees...
