I can tell you why I use the right hand signal when turning right:
People understand it.
The last time I used the bent arm right signal, the driver behind me thought I was giving him/her the finger and gave me one back as s/he roared by.
I understand the "more visible to people to your left (or wherever)" argument. I consider that when signalling, sometimes doing one signal and then the other. But really, drivers seem to understand pointing where you want to or are planning on going. Makes sense, and it is simple communication. And communication is the most important safety aspect.
And I'm not sure people really do remember the hand signals from driver education. They sure don't remember lots of the other things they were taught!
