Most likely because clients are creating folders called INBOX.Folder1, while '/' is Binc IMAP's hierarchy delimiter. It's not Binc's fault; rather the clients that use the old delimiter instead of the new one. Some clients are known to do this although the server reports '/' and not '.' when queried for the delimiter. Most often the solution is to set up such accounts over again (in Outlook, remove the account and then add it again with the same settings).
