LAME rules. I've used it for almost all my MP3 encoding and am really
happy with the quality and encoding speed. I use a shareware Windows
front-end, though (EasyCD Extractor). 

If your cousin wants to do live internet broadcasting of his show, check
out liveice and icecast (both on Linux).
