debian doesn't include lame (it's considered non-free), and so rather than install it from source, I simply use toolame. I've started using .ogg more, which seems to be preferred by the debian community. For ripping CDs, I use abcde, which can work with ogg-vorbis, lame, or toolame. abcde is extremely easy to use and very configurable. None of this is GTK-like, however.
