Actually, the instructions on p. 30 are pretty thin, so here's a quick
walkthrough on making a Spotlight source to find all applications:

1. Install the Spotlight plugin
2. In the catalogue, add a new "QSSpotlightObjectSource" source (click
on the + button at the bottom of the catalogue window).
3. The side drawer should open immediately to ask for the query to use
with your new Spotlight source. If not, select it and click the ⓘ
button to open the drawer.
4. In the Query section of the source details, type
"kind:app" (without the quotation marks).
5. Press the ↻ button at the bottom of the window to make QS update
the source contents.
