I realise that this is 18 months on... but I have found the missing bit of information.
As well as checking the Email To... (Send Directly) option in email addresses you also want to check the same option in the other Types (Preferences ->Actions _> Types) such as Text. This allows the text that is typed to be sent to the the Email To... (Send Directly) Action.
