In the Notes application, ⌥⌘F takes me to the search field. It looks like the 
notes have been hidden from the Mail application’s interface, even though they 
are still stored with its data.

There is (Apple Mail Plugin), and you can get to your Notes folder(s) by 
right-arrowing into Mail.app, but the presentation isn’t ideal. It shows the 
notes using their actual filename, which is useless. You’d have to select one 
and use Quick Look to see what it is.
