1. The syntax should be the same as most 'text inputs' that appear in Mac OS X. You can create a newline with ⌥↩ (optn+return)
2. I cannot reproduce your problem. Is it only specific to certain contacts? There are currently a few problems with getting email addresses from the Contacts list where they have come from other sources (Facebook etc.) Could this be the case for you?
