For the new lfs system itself, building in chroot is better than the alternatives. Myself, I normally build everything else (X, desktops, applications) as root when I'm installing a new system from my scripts - worst case, I can either restore from backups or build the whole thing afresh. Once my systems are in use, I usually build new (extra) packages as a user. The blfs book assumes you compile as a user, so I guess those of us who compile as root get to keep both pieces if it breaks.
