 It all depends what you want to do.  Start with whichever programs
you have found useful on the distro(s) you have been using.

 If you have problems with a specific package, ask.  "it's not
working" doesn't say anything useful - do you mean your _process_
(how to navigate the BLFS book) doesn't work, or the program ?

 For the process, begin by looking at packages you know you want to
use, then work back through their dependencies.  Often, the list is
so long that you need to break it up - e.g. if you want a gnome or
kde desktop you could start by building enough of xorg to get a
minimal desktop, then add dependencies for firefox (so that you have
a decent browser for searching for help), and only then build your
desktop of choice.  For a server, I'm sure the process can be broken
up in a similar manner.

 Yes, the first time will be tedious and involve a lot of planning.
That's partly because there are now so many packages available.
