Can you explain why/how eth0 connectivity is lost?

While testing this setup I simply plug out eth cable to check that ip
connection from the box is still ok.

The problem is present ONLY if I have both ports connected to the same
network segment.
If PC is connected to two different networks, losing connectivity on
one port won't affect another.

Yes, but if you want to send something to default (e.g. the internet) and the interface set as default is down, then you will not be able to do that.
