First, on UUIDs - the kernel does not understand them, it needs
userspace.  Therefore, if somebody wants to use a UUID in the root=
parameter in grub, an initrd is necessary.

If the UUID is only used in /etc/fstab, I have no idea.

I'm also unsure what you mean by symlinks in /etc/fstab.
