Whether you can use the same instructions to build them depends on how different your architecture is. In LFS terms, the nitty-gritty of booting the new system is probably the area which will be most different. For BLFS, AV libraries might be fun on different architectures, and I guess that the xorg video drivers might be different - if you are on a common non-x86 platform, cross-lfs might be more appropriate.
