When you get to the actual transcoding, yes ffmpeg is the way to go.
But if you are ripping from a DVD then you need tccat to extract the
right part of the DVD (and lsdvd, which is not in the book, to list
the titles and chapters).

There is some other package (handbrake?) popular with some people
for transcoding DVDs.  I'm not sure exactly what it offers - the one
time I tried to build it (a few years ago now) it was too out-of-date
in its perl.
