In the Jaws configuration manager, after making sure that the default file is loaded, under the set options menu, there's an option for say all... where you can set an alternative option which is then activated by using alt + ins + down.
I actually found an audio tutorial relating to this somewhere, but I can't remember where. FWIW, I think this was only active in one of the Jaws 8.0.xxx versions.
