It turns out that flash drives are formatted in FAT32 which has a file size limitation of 4gb. So, to make my flash drive behave like a hard drive, I reformatted it to NTFS which has no file size restriction, and voila, I was able to back up my entire 6.6gb Documents and Settings folder without a hitch using the Windows Backup utility. So thanks for suggesting that I try formatting the flash drive.
