Jaws key + Ctrl + S lets you choose between your voice profiles, and think on the jaws menu, under options, if you choose voices, individual voice adjustment, you can change settings for the various profiles, and in my version of jaws 10, there's also a button to restore factory defaults, and pretty sure it's been around for a while.
