Hi Ken,
You can find the options for ripping under the convert menu.
F8, will extract to .wav format,, and F9 will extract to .mp3 format.
You can find additional information on the CDEX page.

I've gone in and configured the settings I want and it is reading the CD,
but how do I begin the ripping?
