You cannot reassign Windows key-U to launch NVDA instead of Narrator.
However, you can launch NVDA by pressing Alt-Control-N, the shortcut key
that was automatically created by default when you installed NVDA. It's not
a good idea to get rid of Narrator, because you never know when you might
need it.

Pretty much when pressing window key u and alt N, instead of hearing the
default narorator, I would hear nvda.
