Here in outlook 07 I seem not to have that choice. I'm thinking I will have
to just manually select signitures.
Maybe it's just best if I just use one huh?

I am using Outlook 2000 and here's how I do it:

1.  Alt T for Tools.
2.  O for Options.
3.  Control Tab to Mail Format Tab.
4.  Tab to "Use this signature by default" Combo Box.
5.  Use up and down arrows to decide which one you want.
6.  Tab to "Okay" and press enter.
7.  Keep tabbing to Okay and press enter until you are finished.

Hi Kimsan,
Although I do not know how to choose the default signature
in Microsoft Outlook, I can tell you how to
determine the e-mail client being used to send a message.
Just focus on the message in question, and hit alt + enter for the 
properties,
and then go to the details tab, and start reading, you will find it in short

order.
The only reason I asked which client you were using, was so that others 
could better answer your question.
