I generally use DSpeech:
http://dimio.altervista.org/

It lets you use the voices it finds on your computer, and can output to either wav or MP3, but lets you set pitch, rate, etc., and while it takes a bit of time to convert really long books, it works more than well enough for me, and it's free.

I am embarrassed; some weeks ago I think a program was recommended for changing text to mp3. I do not have a record of it or any suggestions for its use. Any information about such a program, where it can be accessed and so forth would be appreciated.
