For a simple try, I'd plug in a different keyboard and see if that helps. Double spacing can happen if changed in the Style settings under the Home tab. I have had this too when posting to a list, all spaces become double, but not on all lists. In that case it is a conversion issue. Word is kind of known for messing things up that way when pasting/posting. It could be your keyboard with sticking keys, and you pressed a hot key unknowingly. Worth trying a different keyboard unless you are using a mechanical one now, they have far less issues.
