That's something you'll learn automatically with experience. As you fight 
each monster, you'll learn about how much damage their attacks do, and 
you'll have a pretty good idea of when to heal them. As for what you're 
giving them, the item menu during combat is fairly organized, placing 
related items near each other. Even that's not really an issue, as Unah, one 
of your party members, can always heal people. Oh, and as for who you're 
selecting, that actually is determined by the order of their turns. For 
example, if you're trying to heal the person whose turn was before yours, 
you simply select the item or spell, then move either up or left depending 
on the way you're facing. Yes, this matters. Even this is easy to determine, 
as some offensive things will only show you the enemy. This means that if 
these offensive attacks only show you a target menu that goes from left to 
right, you would move up and down to target your allies with defensive and 
healing spells. It's quite fun, really.
