Instead of a racing game, how about a stunt car or stunt motorcycle game. It could involve doing jumps and stunts for money in diffrent arenas around the country, and if you miss a jump you could have the game report on how many bones you broke and how long it takes to get back to work, in addition it could compute how much money you lost during your stint with a full body cast after trying to jump fifteen buses. This sounds like something that would be a kitchen game, smile. You could choose the number of obstacles to jump, the more to jump, the better the money. and if you get enough of a reputation, you could attempt a bonus stunt, like jumping the grand canyon or something crazy like that. Also, an accesible demolition derby would be very cool.
Orif those are a little too much, the game of scrabble. As far as I know, no one has made an accesible version of that game.
