Maybe pput a piece of electrical tape around the wire before sticking it out
the window to prevent the wire from breaking.

This may be too late.  The resistance of the wire is a significant part of 
the total resistance of wire and sensor.  Once you change the length of the 
wire and add the resistance of a splice, likely not soldered, the whole 
thing is out of calibration.  Some electronic thermometers have internal 
adjustments for adjusting the calibration but you need a standard 
thermometer.
