The few things I have read that talked about ice before the days of 
refrigeration mentioned that large blocks of ice were stored in caves or 
in ice houses underground where the ambient temperature was in the mid 50 
degrees F, about 12 degrees C.  Thick layers of saw dust were placed 
between the layers of ice.  apparently this was enough to keep ice through 
the summer.  They actually used to ship ice from North America to England 
long before steam ships or refrigeration.

About the salt though.  The salt actually promotes the melting of ice, 
that is why we throw salt down on our driveways and roads during the 
winter time.  the key is that it takes a lot of energy for ice to turn to 
water.  For example it takes a lot more energy for a piece of ice at 0 C 
to turn to water at 0 C than it does for the same mass of water to go from 
0 C to 1C.
