Aloha Jim, I would make sure that your fan filter is clean. Do you have a gas or electric stove? It's been my experience that gas stoves create more of a greasy film on ceilings and tops of cupboards. If you fry a lot of food, you can only prevent build up. If it is kind of bad, you can use a degreaser to get it initially clean. Then wiping it with a wipe such as Robert suggested will keep it under control. Another thing that will clean it is spray'n wash. It also does a great job on counters and cupboards.
