Don't worry too much about the temperature of the oven, you want to make sure the meet comes up to the appropriate and safe temperature.
What sort of oven are you using? It is probably a little more difficult to control the temperature of a charcoal oven. I don't know of a thermometer which will reliably measure the ambient temperature of an oven, nothing in those temperature ranges anyway.
