Hi Jennifer, I have a device I bought from Lee Valley a little over half an inch wide and about an inch thick which is a series of plastic laminations which slide over eachother as you bend it. It is intended for drawing infinite curves and compound curves however the radius may not be as tight as you need for some sewing jobs I couldn't say. I bought the long one at 36 inches, there is a shorter one. My only concern is if it might be too high to easily manipulate your cutting wheel along.
Like Tom suggested, pinning it might also help manage holding the curve while cutting. This is related to sewing, but I think it may come up in other projects too. I use what is called a rolling cutter to cut fabric. It is similar to a pizza cutter, but is smaller in diameter, and incredibly sharp. For straight lines I use a ruler or something similar to run the cutter along. I am trying to come up with something flexible to set up for curves that I can run the cutter along. Any ideas?
