Yeah, this might make sense I guess if your house were going to be empty for a couple weeks, but doing it daily has to be more costly and probably harder on the equipment than just leaving things alone.

When you turn the thermostat back up, it has to bring the entire tank of water back up to temperature and I'd bet that uses more energy than leaving it hot.
